Why this recipe is special:
Birthdays, Christmas, dinner parties or a special dessert, Taramisu is super special because it is made the day before. This means it tastes better and that you don't need to spend your special day/party racing around fussing about dessert! Perfect!!
Serves: 6
Ingredients:
400g mascarpone cheese
1 Tbsp hansells vanilla extract with seeds
1 Tbsp hansells natural almond essence
1/2 cup icing sugar
2 1/2 cups of cream
pinch of salt
1 1/2 packets of sponge fingers (unibic ones are available from supermarkets)
2/3 cup cold strong coffee (OR SEE NOTE BELOW IF YOU WANT TO USE ALCOHOL TOO!)
Cocoa or drinking chocolate
NOTE: You can also use up to 1/4 cup of amaretto, rum or marsarla (according to taste) mixed together with the cold espresso to make 2/3 cup of liquid
Method:
1) Give the mascarpone a little stir to smooth it out
2) Beat the icing sugar, cream, hansells vanilla extract and almond essence, and salt until soft peaks form. Then, fold in the mascarpone mixture gently until combined.
3) If using alcohol mix it together with the espresso
4) Line the bottom of a dish (or you can make individual smaller bowls if you like) with lady fingers (flat side down).
5) Gently brush half of the espresso/alcohol mixture over the lady fingers (or dunk each lady finger in the mix very lightly - don't want them soggy!!) before placing it in the dish
6) Spread half of the cream/mascarpone mixture over the ladyfingers.
7) Now take a sieve and sprinkle over cocoa or drinking chocolate to cover the cream/mascarpone lightly
8) Add another layer of lady fingers, repeat steps 5 – 7.
9) Cover the Taramisu with plenty of plastic wrap and put in the fridge for at least 6 hours before eating
PLEASE NOTE:
Can be eaten the day of making, but tastes better if you can make it the day before. Plus if you miraculously have leftovers, it tastes even better the next day! It's delicious
