Strawberry Syrup by Hansells Recipes

Ingredients:
Use this delicious taste of summer as a refreshing drink with soda water or sparkling wine, as an ice cream topping, parfait sauce or drizzle over the top of a creamed pavlova.
500g strawberries
1 cup water
1 cup sugar
1-2 tablespoons citric acid
Method:
Hull the strawberries and chop fruit into quarters.
Place strawberries in a saucepan with the water. Cover and bring to the boil Cook for about 5 minutes or until the fruit is soft.
Sieve the fruit, reserving the juice.
Return to a clean saucepan with the sugar and citric acid. For less sweet strawberries use less citric acid. Bring to the boil, stirring to dissolve the sugar.
Pour into a bottle that has been washed out and heated with boiling water.
Store in the refrigerator. If using as a cordial with soda water or sparkling wine, dilute one part of syrup to about 8 parts of soda water or sparkling wine.
